Bajan Food Promotion

The Queen Elizabeth Hotel (Montreal) and The Royal York Hotel (Toronto) welcomed Executive Chef Jean-Claude Plihon from the Fairmont Hotels in Barbados (Royal Pavilion & Glitter Bay) who created special Bajan-inspired dishes for the events sponsored by the Fairmont Hotels, Air Canada and Medina Quality Assurance Services and the Barbados Manufacturers’ Association. Using Bajan products, guests dined on Flying Fish, Crab and Salt Fish Cakes with Mango-Avocado Salsa, Roasted Red Snapper with Curried West Indian Lentils, Braised Greens and Chutney, and Sweet Sugar Cane Kebob of Bananas and Mangoes.
The events were well attended in both Montreal & Toronto.
